
Note that the rum is heated with sugar and water, which will remove the alcohol, not the taste. So feel free to partake of this healthy salad without being concerned about becoming inebriated.
Ingredients:
In a small saucepan, combine the sugar, water and white rum. Bring the mixture to a simmer over a medium heat, and stir to ensure that the sugar dissolves. Remove the saucepan from the heat and add the mint leaves.
Allow the mixture to steep for about 10 minutes and then strain, discarding the mint leaves. Pop the liquid into the fridge to chill before adding to the fruit.
In a large bowl or sealable plastic container, combine all of the fruit. Pour the mint syrup over the fruit and chill for an hour. Tumble the mixture from time to time to ensure the syrup is well combined with the fruit.
You could serve this fruit salad by itself, or with some Greek yoghurt or ice cream.
