Spicy Strawberries

Strawberries are a curious fruit. They seem to gently take up a little of the flavour of whatever you care to combine them with

In this case it will be a small amount of black pepper and some mint. To be ultra adventurous try it with basil, it's absolutely delicious. The balsamic vinegar is optional, however I do like the bite it gives the completed dish.

Ingredients:

  • 1 punnet strawberries
  • ½ cup sweet white wine
  • Small dash of balsamic vinegar (optional)
  • A few drops of vanilla extract
  • 10 fresh mint or basil leaves
  • Black pepper
  • Sugar for dusting

Hull the strawberries. If they are large, cut them in half lengthways. Sprinkle the strawberries with a little sugar, the wine, vinegar (optional), and the vanilla extract. Toss the strawberries very gently and scatter with the mint (or basil) leaves. Pop into the fridge or chiller for at least an hour to allow the flavours to blend.

When ready to serve, you can remove the mint leaves from the strawberries if you like. Place the strawberries and the resultant juice into a serving bowl and grind over a little black pepper. Unusual flavours, but it tastes spectacular.
