Prawns with Tomato

The great thing about this recipe, apart from the flavour, is that everyone peels their own prawns, which makes less work for the cook

Ingredients:


  • 1 tablespoon olive oil
  • 1kg large green prawns
  • A splash of brandy
  • 2 cloves garlic, finely grated
  • A small bunch Italian parsley, finely chopped (or 3 teaspoons dried parsley flakes)
  • 1-2 tablespoons tomato paste
  • 1 cup fresh breadcrumbs (toasted slightly)


Heat the olive oil in a large pan over a medium to high heat. Add the prawns and cook until they are just pink. Pour the brandy over the prawns (do not light the brandy – we just want the flavour) and shake the pan well.


Reduce the heat under the pan and add the garlic and parsley. Stir well to incorporate all of the flavours and then add the tomato paste. Continue to stir until the prawns and all of the ingredients (except for the breadcrumbs) are well combined.


To serve, tip the prawns into a serving bowl and garnish with the toasted breadcrumbs. Don't forget the paper napkins for the fingers.
