Pork and Veggies with Apple in Foil

Being that I'm typical of most males, I like my meat and veggies each night.This recipe, a nice little twist on an old time theme, means that you still get to enjoy the flavours that come in a roast but in a much easier format. And best of all, you won'

Ingredients:


  • 4 pork chops (your favourite cut will do)
  • Salt and pepper to taste
  • Oil for cooking
  • Aluminium foil
  • 4 sage leaves or 1/4 teaspoon dried sage
  • 2 cooking apples, thickly sliced
  • 2 medium potatoes, thinly sliced
  • 1 medium carrot, julienned
  • 1 orange, zest and juice


On the barbecue (in the campground or caravan park), quickly brown your pork chops to give them some colour. The object there is to seal the chops.


Season them with salt and pepper. Set aside until ready for their next step. Cut four squares of aluminium foil big enough to make parcels from. Rub the foil with the oil to prevent the chops from sticking and add a chop to each.


Layer the rest of the ingredients in the above order finishing with the zest and a sprinkling of the juice. Seal the package and bake in a moderate oven or camp oven for about an hour. Serve with whatever other vegetables you like.
