No-Bake Danish Apple Dessert

When we cook in the bush, we usually provide our clients with a dessert of some sort. This usually means baking something

But we just love no-bake desserts - they can be made in advance, sometimes days ahead, freeing up time to relax at the end of a busy day.

Ingredients:


  • 1kg apples, peeled, cored and sliced
  • 4 tablespoons water
  • 30g caster sugar
  • 1/2 teaspoon vanilla essence
  • 175g unsalted butter (if available)
  • 300g fresh breadcrumbs
  • 1/2 teaspoon cinnamon


Put the sliced apples into a heavy based pot and add the water. Cover and cook over low heat until the apples are soft. Stir in the sugar and vanilla. Set aside.


Meanwhile, in a frypan melt the butter and add the breadcrumbs and cinnamon, stirring them constantly until all of the butter is absorbed and the crumbs are golden brown.


To assemble the dish, sprinkle a third of the crumbs over the base of your serving dish, then add half of the apples and so on, ending with a top layer of crumbs.


Set the dish aside in a cool place to set before serving. Indulge yourself with cream whipped with heaps of sugar and a dash more vanilla essence.
