
Making pizza outdoors is a lot of fun and what else would you put on your Christmas pizza other than pork and figs?
Here’s how to cook it camp style…
Prep time: 10 minutes
Cooking time: 30 minutes
Ingredients
To make the pizza base: 2 /12 cups all-purpose flour, olive oil, rapid-rise yeast, warm water and salt
Thinly-sliced prosciutto
Figs
Sage
Garlic powder
Method
Making the pizza base:
1. In a mixing bowl or pot, add the flower, yeast and salt then mix quickly with a fork
2. Add warm water and 2 tablespoons of oil, mix with fork until the mixture resembles dough
3. Then knead the dough several times to ensure all the ingredients blend together in harmony
4. Cover dough for approx. 20 minutes
5. Once it’s risen, divide dough into two parts- now it’s time to make the base crust!
6. Heat 1 tablespoon of oil in a 10” cast iron skillet and swirl to coat the surface
7. Place one piece of dough in the skillet, pushing it to the edges of the pan
8. Drizzle ½ tablespoon oil along the edge of the skillet
9. Place the skillet on a grate over a campfire or camp stove at high heat and cook for approx. 5 minutes until the bottom begins to turn golden brown and firm
10. Take the pan off the fire and place on safe space and use a pair of tongs to lift crust out of the pan and flip
11. Cover the pizza in foil
Completing the pizza:
1. Cook the prosciutto until nicely browned and sprinkle garlic powder to season
2. To cook the figs, add them to a separate pan and cook until they are caramelised
3. Layer your ingredients onto the pizza base
4. Garnish with sage
5. Return the pizza to the campfire or stove for approx. 5 more minutes
6. Remove foil and let rest until cooled
