Chana Masala literally translates to 'mix-spiced small chickpeas', and the main ingredient is a variety of chickpea known as chana.
It's a simple and comforting Indian dish and it offers campers a perfectly satisfying and nutritious meal.
Chana Masala
Preparation time: 5 minutes
Cooking time: 10-15 minutes
Serves two people
Ingredients:
1 can chickpeas
1 can roasted tomatoes
1 packet masala spice mix
Garlic powder
Chopped brown onion
Olive oil
Coriander leaves to garnish
Lemon
Method:
Boil the water for the rice.
Sauté onions and spice mix in a camp pan. When they start to soften, add the garlic and tomatoes.
Let the tomatoes cook for about five minutes, then add the chickpeas (including the liquid).
Let the concoction simmer for a few minutes, which will allow the liquid to reduce.
Add the spice mix and season with salt, and then stir. Squeeze in some lemon juice. By this point, the dish will be wonderfully aromatic.
Finish cooking the rice while this is simmering away.
