
Cornbread is considered to be the cornerstone of the Southern United States’ cuisine, pardon the pun. It’s made by grinding raw corn grains and was an inexpensive staple during the American Civil War.
People around the world still enjoy this staple and it’s very easy to make in the great outdoors. This recipe is a slightly sweeter version with the addition of honey.
Ingredients
· 1 cup cornmeal, medium grind
· ½ cup flour
· 1 tablespoon baking powder
· 1 cup milk
· 1 egg
· 2 teaspoons of salt
· 2 tablespoons of honey
· ½ tablespoon oil
Equipment
· Large bowl
· Fork
· Cast iron skillet
· Foil
Method
1. Mix the cornmeal, flour, baking powder and salt to combine in a large bowl
2. Add the milk, egg, and honey and mix with a fork until fully incorporated
3. Over the campfire, heat the oil in your skillet and swirl so it coats the bottom
4. Pour batter into the skillet and create even layer
5. Cover skillet with foil
6. Cook over medium-low heat for 15 minutes, then remove from heat and let the bread rest covered for 5 minutes
7. Enjoy!
