Bertus' Malawi Chicken



  • 12 chicken drumsticks
  • 1 onion, diced
  • 4 cloves garlic, crushed
  • 2 sticks celery, diced
  • 1 green pepper, diced
  • 2 cans coconut milk
  • 1 tin chopped tomatoes
  • 2 tbsp fruit chutney
  • Half a cup of basmati rice
  • Salt and pepper to taste
  • Fresh coriander leaves, chopped


In a large pot, add the oil and brown the drumsticks. Add the onion and garlic and saute until soft.


Add the celery and green pepper and cook until soft.


Add the wet ingredients and cook for about an hour or until the chicken is falling off the bone. Finally, add rice to help thicken the mixture. Sprinkle coriander over each meal prior to serving. Serve with cous cous or steamed rice and enjoy. Serves four.
